The all round heat of the AGA cooks a beautiful crumble, golden on the top with soft fruit underneath.  This recipe used thawed frozen autumnal fruits, however please use whatever fruit you like, fresh or frozen.  If using fresh fruit allow for more cooking time.

The all round heat of the AGA cooks a beautiful crumble, golden on the top with soft fruit underneath.  This recipe used thawed frozen autumnal fruits, however please use whatever fruit you like, fresh or frozen.  If using fresh fruit allow for more cooking time.

 Serves 8-10

 Ingredients:

For the crumble mix:

  • 175g (6 oz) plain flour
  • 85g (3 oz) wholemeal flour
  • 175g (6 oz) butter
  • 175g (6 oz) demerara sugar
  • 55g (2 oz) jumbo oats
  • 55g (2 oz) toasted hazelnuts, halved

 For the fruit filling:

  • 1.5kg (3 lb 5 oz) frozen red fruit, if thawed pour off some of the liquid
  • 55-85g (2-3 oz) sugar

Method

Place the flours, butter and sugar into a bowl and rub in the butter until the mixture resembles breadcrumbs, or use a food processor for this stage.  Stir in the oats and hazelnuts.

Tip the prepared fruit into the base of the roaster and sprinkle with sugar.  Tip over the crumble mixture.

2 Oven AGA: Hang the roaster from the lowest set of runners in the Roasting Oven and cook for about 20-25 minutes until golden.  Slide the cold plain shelf on the second runners down and continue to cook for a further 10-15 minutes.  Alternatively after 25 minutes move the roaster down to the middle of the Simmering Oven, where it can finish cooking and wait to be eaten.

3, 4 and 5 Oven AGA:  Hang the roaster from the third set of runners in the Baking Oven and cook for about 35-40 minutes until the crumble is golden and the fruit cooked.

Serve with custard, cream, crème fraiche or ice cream.
