In essence this dish borrows from a Mexican food culture. It consists of two tortillas with a filling between which is briefly cooked and served cut into wedges. Another good food fast, using the Simmering Plate.
8 tortillas or wraps
1 can refried beans
225g cooked sliced chicken
4 tbsp chilli relish
4 spring onions, sliced on the diagonal
8 cherry tomatoes, sliced
115g grated well-flavoured cheese
Place 4 of the tortillas on a board and divide between them the refried beans, spread over each one then top with the chicken and chilli relish. Sprinkle over the spring onions and tomatoes then the grated cheese. Cover with the remaining 4 tortillas.
AGA hotplate cooking: Place a piece of Bake-O-Glide onto the Simmering Plate, then put on a filled tortilla, close the cover and cook for about 3 minutes, open the cover and turn over repeat and cook for another 3-4 minutes. Serve piping hot with sour cream and guacamole.
