  • 200g crab meat
  • 400g un-dyed smoked fish
  • 200g prawns
  • 40g butter
  • 25g plain flour
  • 425ml milk
  • Seasoning to taste
  • 150g tasty cheese, grated
  • Juice and zest of 1 lemon
  • Parsley, chopped
  • 4 slices of fresh brown bread, crumbled


Melt the butter in a pan and add the flour. Cook slowly until a grainy consistency but not coloured. Remove the pan from the heat and whisk the milk into the mixture. Return to the heat to cook, whisking continuously until sauce thickens.

Add the cheese, lemon juice, zest and parsley and then season to taste. Mix together the crab, flaked fish and prawns and add to the sauce.

Pour the mixture into an oven proof square dish and top with breadcrumbs. Bake on the lower shelf of the Roasting Oven for about 15-20 minutes until golden brown.
